For good Brazilian coffee, begin with very clean utensils and use 2 tablespoons of pulverized coffee for 3/4 cup of freshly drawn cold water. Heat the water just below boiling (boiling will vaporize the essential oils). When the water has reached the proper temperature, stir in the measured coffee and remove from heat. Let stand 1 minute and stir again, then pour into the strainer and strain directly into the coffee server. Serve in demitasse cups immediately, very hot, and with plenty of sugar. Coffee is an accepted and highly appreciated beverage in all parts of the world; however, there is no other country where coffee is such an important adjunct to everyday living as in Brazil. The drink (called cafezinho) is served in demitasse cups at frequent intervals throughout the day. It is not unusual for a Brazilian to consume anywhere from 12 to 24 of these little demitasses per day. |
